Oolong tea is made from partially oxidized tea leaves from the Camellia sinensis plant—the same plant for white, green, black and pu’erh teas.  Oolongs can be quite varied because the oxidation levels span 10% to 70%–there are many different taste experiences with this style of tea.  In addition, oolongs will vary depending on the cultivar, elevation grown, and tea maker skill.  Some oolongs are given a finishing roast–giving even more complexity to this unique style of tea.   This is a great class to explore just what type of oolong you may enjoy, while you learn about how this unique tea is made, and, become familiar with some of the most common names.  $30 per person
